Pumpkin Puree Alfredo

Let’s be honest, it’s October and all anyone wants to do is eat pumpkin. Even if you aren’t a fan of the spooky vegetable, it’s hard to avoid, so you might as well give in.

This pumpkin Alfredo only takes 20 minutes to make. It’s lighter and brighter than a traditional Alfredo but is just as creamy. It’s the best way to give in to fall flavors without having to go full pumpkin spice latte.

Ingredients:

  • 1 lb of pasta
  • 1 medium onion chopped
  • 2 cloves of garlic minced
  • 1 15oz can of pumpkin puree
  • 1/4 cup of dry white wine
  • 3 tablespoons of oil
  • 1 tablespoons of butter
  • 1/2 cup of parmesan
  • 1 cup of sour cream
  • salt + pepper
  • 2 tablespoons of rosemary
