Birthday Cake Cookies

Sometimes I crave birthday cake but don’t want to deal with the fuss of making a cake. That’s why these cookies are perfect! They also look so fun and would be the perfect treat to bring to any birthday party! Or just stay home and eat a whole tray yourself 😉 

Ingredients:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup rainbow sprinkles
  • 1/2 cup unicorn morsels from nestle or white chocolate morsels
Step 1.

Preheat oven to 350°F

Step 2.

In a large bowl, cream together butter and sugars. Add eggs, and vanilla extract; beat until light and fluffy.

Step 3.

In a separate bowl, whisk together flour, salt, and baking soda.

Step 4.

Add flour mixture to butter mixture, a little at a time, until just combined. Fold in white chocolate chips and rainbow sprinkles.

Step 5.

Place golfball sized scoops onto a premed baking sheet 2 inches apart. Use your fingers to gently flatten each cookie. Bake for 15-20 minutes, until edges are lightly brown.
