Spiced Braised Eggplant

Sometimes we don’t need a whole new recipe to spice dinner up, we just need to revamp some elements. This spiced braised eggplant dish is perfect for that. It’s jam packed full of flavor and can be cook on your stove top while you roast your go to salmon or chicken in the oven.

The most important step in this recipe is how you cut the eggplant. You want to make sure that there is skin on each piece. Eggplant is a weird texture and it will disintegrate into the pan is there isn’t skin holding it together.

Ingredients: 
  • 2 eggplant 
  • 3 tablespoon of oil 
  • 3 cloves of minced garlic 
  • 1 tablespoon of tomato paste
  • 2 teaspoons of paprika 
  • 1 teaspoon of salt 
  • 1 teaspoon of ground coriander 
  • 1/2 teaspoon of sugar 
  • 1/2 teaspoon of ground cumin 
  • 1/2 teaspoon ground cinnamon 
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger 
  • 2 1/2 cups of water 
  • 1/2 cup of plain yogurt
