Almond Flour Banana Muffins

These muffins are healthy, delicious and perfect for breakfast or as a snack. They are gluten free, dairy free, grain free and refined sugar-free making them guilt free. The almond flour has protein packed into it, making these a great pre/post working snack. Add blueberries for an extra sweet fruit kick or chocolate chips, because chocolate makes everything better.

  • 2-3 ripe bananas (2 cups mashed)
  • 2 eggs
  • 1 tsp  vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp of apple cider vinegar
  • 1 tablespoon of maple syrup
  • 1/4 cup of shredded unsweetened coconut (optional)
  • 1/4 tsp salt
  • 3 cups almond flour
  • 1/2 cup of blueberries or 1/2 cup of chocolate chips (optional)
  • Coconut oil to grease the pan
Step 1.

Preheat oven to 350.
Mash bananas and mix in a large bowl with eggs, maple syrup and vanilla until well combined. Add in baking powder, baking soda, cinnamon and salt until everything is well combined.

Step 2.

Add in almond flour and continue to mix until all ingredients are smooth and well combined. Add in blueberries or chocolate chips if desired. Add extra of either if you like a more jam packed muffin. Save a few chips or blueberries for the top.

Step 3.

Grease a muffin tin with oil and evenly distribute the batter. Add ur extra blueberries or chocolate to the top and bake for 20-25 minutes. Let cool and enjoy!
