Tomato and Asparagus Tart

This tart is so delicious! The best way to describe it is a fancy pesto(ish) pizza. It looks impressive, but it’s super easy to make. To make your life easier you could buy the crust pre-made, or swap it out for a cauliflower crust if you want… cauliflower crust is not easier, but if you have a good recipe for it, please pass it along! I would love to try it 🙂

For the Crust:
  • 2 1/2 Cups of All Purpose Flour
  • 1 tablespoon of salt
  • 1 1/2 sticks of COLD unsalted butter
  • 1 cold egg yolks
  • 1/2 cup of Ice water
Filling:
  • 3-4 medium firm tomatoes
  • 20 asparagus spears
  • 3 large garlic cloves
  • 1/2 cup of fresh basil
  • 1 cup of fresh parsley
  • 1 tablespoons of fresh thyme
  • 6 tablespoons of dijon mustard
  • 1/2 cup of good olive oil
  • 1/2 cup of parmesan
  • 6 ounces of Gruyere
  • Salt + Pepper
