Green-Estrone Soup

This is the perfect soup for spring. it is full of fresh and vibrant veggies. It will fill you up and keep the feeling cozy on those colder spring days.

Who knew there were so many types of pees in the world. This recipe is a little ridiculous for that reason. There were a lot of ingredients that I had no idea even existed, let alone knew where to find. I modified most of it by finding substitutes, but one question I have is; what are English peas? and how many different types of peas are there?!

Ingredients you will need:

  • 1 bunch of spring onions/scallions
  • 3 tablespoons of unsalted butter
  • 3 tablespoons of extra-virgin olive oil + 6 more tablespoons for later
  • Salt + Pepper
  • 12 ounces of small potatoes
  • 1/2 teaspoon of crushed red pepper
  • 1/4 cup white wine
  • 12 ounces of baby bok choy
  • 4 ounces of green beans
  • 8 ounces of sugar snapped peas
  • 1 cup of english peas?(I just got canned)
  • 8 ounces of small pasta
  • Lemon for zest
  • 1 bunch of chives
