Braised Artichoke Spaghetti

This Braised Artichoke Spaghetti is a great light pasta for Spring and Summer.

You will need:

  • 3 Large Artichokes
  • 2 Lemons
  • 10 Garlic Cloves
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup of parsley
  • 1/3 cup of white wine
  • 1 pound of Spaghetti
  • Salt and Pepper
  • Crushed Red Peppers
  • Parmigiana

I love artichoke – it’s mainly a vessel to get olive oil and salt into my mouth but they are very addictive. Just boiled or steamed and then eaten leaf by leaf  is such a great snack. It’s not a light snack but also not exactly a meal. 

Artichoke is one of those food that I wonder – what was going through the mind of the first person who ate this. Like nothing about this vegetable is inviting. It’ prickaly. It takes a long time to cook. It inedible raw (personal opinion not fact) and there is very specific way to eat it so you don’t cause serious damage to you mouth and esophogus. I would have hated to be around for the trial and error of this food.
