Crispy No-Fry Eggplant Parmesan

I am not a coordinated person. So the idea of having hot oil on my stove or even worst, putting stuff into the hot oil, seems like a terrible idea. which is why this recipe was perfect for me. Instead of breading and frying each piece in oil (which also sounds like it would take forever) I threw them on a baking sheet cooked them in the oven.

No all of them came out crispy, but I think through trail and error you could perfect this recipe. Because like anything covered in tomato sauce and melted cheese – these were amazing! They were a vegetarian twist on a classic and without having to deep fry them, they were significantly healthier.
